This recipe is a nice change to the traditional chicken salad with apples, nuts and feta. This would seem to be heavy and spicy – but it was not!! This was so light with a touch of sweetness. Really scrumptous summer eats paired with jasmine rice.
Ingredients: Rice, Bone in Chicken Breasts (not necessary), celery, scallions, curry, mango chutney, dry white wine, raisins, mayo(substituted most of it with Greek Yogurt) and top with roasted salted cashews.
