Plantain Gouda Salad

This is another yummy salad I threw together with random things I had leftover and new things I had purchased.  As I’ve said before a successful salad needs a good crunch, in this case I used plantain chips.

I’m always looking for alternatives for potato chips,  since that is my ultimate weakness. I gave up fried chips in vegetable oil years ago and so I’m glad grocers are finally getting away from those and offering new healthier alternatives. If you start eating the newer alternatives you will notice a huge difference.

Things to look for are chips that are baked, and never fried. Some are pan cooked, and usually with newer alternatives like sunflower, coconut, palm, avocado, sesame, olive, canola, corn, grapeseed and peanut oils.  

Ingredients: Romaine, purple cabbage, banana peppers, plantain chips, chicken, cucumber, avocado, red onions, balsamic AND slices of  jalapeno gouda!
