Bean, Chicken Salad


 (A section of my little herb garden. I do this every season because it is so affordable and at any given time you have herbs for your meals you can get in seconds. Basil, thyme, chives, and oregano.)

Yet another great summer salad. This one was created with leftovers. The beans are a great addition to a salad. The have the consistency of eggs and taste so good when hard-boiled eggs aren’t available.

Ingredients: Romaine, iceberg, cherry tomatoes, carrots, white beans & herbs, chicken, avocado, balsamic and whole wheat biscuits (made with half the butter – eaten in moderation!)

Approximate cost: $5.30
