White Bean Burritos

 

 Sauteing the red onions, garlic and herbs.

 

 
Always add an acid to a dish for ultimate taste. In this case, balsamic vinegar. 

 

 So, these were created because of all my talk about black bean burritos. I went downstairs to make some after posting my entry about them only to find I had no black beans! How is that possible I wondered? So, of course I made burritos with a mixture of northern beans and cannellini beans. It was still good, after all, it was beans!

Ingredients: corn tortillas, garlic, balsamic, corn beans, cannellini beans, basil, thyme, oregano, red onions, olive oil, cheese, avocado and romaine lettuce.

Approximate cost: $2.60
