Chicken Salad Salad

So….wondering what to do with chicken the other day, I decided to make this again which is always good. You can add so many different things to it and it’s always good. Usually I make it with walnuts, apples, dried cranberries, grapes and celery. But whatever you have is fine as long as it’s a mix of sweet and crunch. Usually of course this is all stuffed in a sandwich, but I wanted something light and I had a whole bag of spinach that needed to be used.

Recipe/My Ingredients:

  • Boneless Chicken Breasts
  • One apple
  • Low fat organic yogurt(instead of mayo)
  • raisins
  • parsley
  • I did a squeeze of 1/2 lemon since I had it
  • salt & pepper



 Put everything in a bowl and mix.



 Mmmm…this tea is yummy. Raspberry is one of my favorite fruits and goji! Goji is another one of those products appearing everywhere now. Goji berries contain one of the highest amounts of antioxidants also like, (blueberries, strawberries, cranberries, green teas, artichoke hearts, avocados, herbs, beans, blackberries, prunes, apples, pecans- shall I go on?…basically fruits, veggies and whole grains!) ….and you know, that one everyone loves- chocolate. (BUT you have to get the real chocolate, don’t be eating a Snickers or bag of M&M’s thinking you’re getting anything good from that.)
