Roasted Veggie Spread/Dip…

 After several days of variating veggie sandwiches that were heavenly, I decided to throw everything left into a food processor. You know, to make a yummy roasted veggie spread/dip. It was spectacular, I gotta say. Since then, it’s been used on sandwiches and as a great snack with toasted whole wheat bread with some garlic and chive cream cheese and whole wheat crackers. I’m contemplating putting the rest on a pizza or in a calzone if I have time.

Roasted Veggie Spread/Dip Recipe:

The rest of the roasted veggies were used,

  •  roasted onions
  • roasted eggplant
  • roasted zucchini & yellow squash
  • roasted green & red peppers
  • I added some gouda cheese & parmesan reggiano
  • olive oil
  • balsamic
  • splashes of hot sauce
  • olive oil
  • tiny bit of water
  • salt & pepper to taste

I think that was it. I think people follow recipes to closely, just throw everything in a food processor and add stuff until it tastes good. Also remember when you are processing something, if the ingredients stop moving in the container and stop blending, you need more liquid of some kind. Enjoy!
