Stuffed Pancake Dinner

I did go ahead and get sick with some kind of cold and coughing. yey. Because of this, several nights ago I did not feel like dinner food, I was craving breakfast food. So, breakfast food was had. I needed something more than just couple pieces of flat pancakes. I searched around and realized I had fruit that needed to be used. So in went a banana and a chopped apple. I microwaved the apple for about 2 minutes and then tossed that into the whole grain batter. They came out really good, you couldn’t really taste the banana but it added to the texture of the pancake and the apple made it heartier and sweet in a healthy way. Of course I had to add real maple syrup, raisins and walnuts. Yum!
