It’s cold…so I’m making Soup

First off, today was a 6 mile run in about 48 minutes! (Yesterday was a quick 1 miler with my dog, mainly for him and a good quick one for me since I didn’t have time for a long one.) I’m logging distance like crazy lately, easily I might add. I was worried about getting a headache or worse because of the cold, but it was in the 60’s. Definitely, still tolerable and the sun was shining madly. 🙂 It was a really, really beautiful day and the run was great. A little windy, but tolerable. Trees are now orange and yellow at the park!

A couple of weeks ago I posted the recipe for Bush’s White Bean Chicken Chili. I happen to see it one day and decided to try it since I love white beans and cumin. It is an extremely satisfying recipe to make.  View it here:

Last night was freezing and I craved soup again. Looking around the house I realized I had stuff to make something like it. As i have said before, people go by ‘recipes’ too much. You can make something from whatever you have at your house. Especially SOUP! The good thing is, you can’t mess it up. The only way you could mess it up is dumping tons of salt in by accident. But soups are convenient, fast and very inexpensive. You can basically make a soup with water, salt and some peas if you had to. If you don’t like it, you can always add something to it the next day and heat it up again. We love this soup so much I wanted to make sure I could eat this for the next several days- it is THAT good!  So I began, here is what I created with what I had:

Kat’s Take on Bush’s White Bean & Cumin Soup/Chili

  • 1 whole onion, diced
  • 1 whole green pepper, diced
  • 1/2+ c flour
  • 6-7 cups water + 1 cup milk(not necessary)
  • 1/2 t dried garlic
  • 1 t cumin (ran out!)
  • 1/2 t curry
  • a good sprinkling of cayenne pepper & chili powder
  • 2 t fresh dill, chopped up finely
  • 2 t fresh oregano,,chopped up finely
  • A huge handful of cilantro,  chopped up (love!)
  • 1 bay leaf
  • 1/8 c tomatillo sauce (I finished off a small jar I had)
  • 1 c rice (leftovers)
  • 1/4 c vinegar (my ‘acid’)
  • 2 cans northern beans (any white bean)
  • 1 can of black beans (why not? love beans)
  • 1 lb. (package of cooked cubed chicken)
  • smoked mozzarella for garnish

Oh my gosh, I can’t explain to you how good this soup is!! And, my husband loved it, he called earlier and thanked me for packing his lunch today. It’s cold outside!! So, if you have time try it, it’s so good! 🙂

    Looks yummy! Love eating white beans, and this is another delicious way in which to eat them.

  2. This looks amazing, I love all the herbs you’ve used. I feel all backwards as it’s way to hot in Oz right now to be making soup, but the weather can always turn very quickly so am saving these recipes up!
